Ethiopia

Coffee in Ethiopia began over 1,000 years ago. Ethiopia is one of the only places where coffee grows wild. Approximately 85% of Ethiopia’s coffee is produced by small farmers on less than 1 hectare of land. Coffee harvesting can be divided into 4 categories in Ethiopia – forest, semi-forest, garden, or estate.

The story goes that a goat herder named Kaldi saw goats eating berries from what is now known as a coffee tree and then observed that it made them especially active. He reported this observation, and people started using these ‘magic’ beans for trade. The legend of this energizing bean grew, and by the 15th century, coffee was moving all over the Arabian Peninsula.
The high elevations and mountainous regions make for excellent growing conditions. There are more than a thousand varietals of coffee beans grown in Ethiopia. Because coffee trees grow naturally in Ethiopia, most of the coffees are under shade, among other plants, and without the use of agricultural chemicals.

Our Ethiopia Harrar Longberry comes from whole, heirloom Ethiopia arabica coffee cherries that are sun dried on raised beds, and carefully tilled by hand to ensure that it is uniformly dried. When observing a sample of dry process coffee, a subtle peppering of color is noticeable—an unmistakable visual characteristic of hue that forms as a result of the drying process. This peppering can become even more noticeable once the coffee has been roasted.

Mexico

Our Mexico Rancho San Francisco is perhaps one of the most underrated and undervalued coffees in all Central America. The “Rancho” as we call it is Strictly High Grown (SHG) by third generation farmers, Delmar and Fernando Moreno Guillen on their family estate in the mountains of Chiapas. The farm utilizes a significant amount of natural shade trees, and while not certified organic, it is naturally grown and processed without chemical fertilizers. Our Mexico Rancho San Francisco is comprised of mostly Typica and Bourbon varieties, but there are a few Caturra trees still producing in some areas of the farm.

Overall this is one of the most versatile coffees around—it can be roasted across the spectrum, blended, or enjoyed as solo cup or single origin espresso. The beans are relatively softer than other high grown centrals and develop a bit faster in the roast, coming out looking nice and BIG!

Chiapas is the southernmost region in Mexico, sharing a border with Guatemala to the west, and Oaxaca to the east. It is well suited to produce an almost “Guatemala-esque” profile; medium body, medium acidity (although not as much as a Guatemala Huehuetenango), a nice oaky, nuttiness and a hint of spice.
The mountainous highlands of Chiapas provide an ideal climate in terms of temperature and humidity for arabica cultivation; it’s also home to some breathtaking vistas and numerous ancient Mayan archeological sites.
